Ossein (Proteine) is a process where the dried fish scales are demineralized and calcium is removed from the scales (also called decalcification). The scales are made ready for collagen peptide extraction. Ossein is a collagen precursor pretty close to 100% protein once moisture is deduced. We obtain it by removing minerals matters from fish scales. Ossein has recently gained popularity as an alternative material to fish skin for marine collagen production.
