Our anchovies are processed by immediate boiling (blanching) after catch to preserve, reduce fishy odor, and deactivate. After boiling they are rinsed and hygienically dried (controlled sun-drying or mechanical dryer) without heavy salting, seasoned in a natural, savory flavor preferred by markets that wants a Less salty product. Suitable for direct consumption, food processing, and export.
