Anchote, also known as Coccinia Abyssinica , is a tropical vine that is native to Africa and Asia. It has large, heart-shaped leaves and produces delicate white flowers, which later develop into elongated, green fruits that can grow up to 30 centimeters in length. Anchote is primarily grown for its starchy, tuberous roots, which are a staple food in Ethiopia and other parts of Africa. The roots are rich in complex carbohydrates, dietary fiber, and vitamins and minerals, and are typically boiled or baked before being mashed and mixed with other ingredients to make traditional dishes like "kocho" and "bullaloo."
